Preparation Cous Cous
For 500 grams of Cous Cous ‘Ncucciato add 3-4 tablespoons of Extra Virgin Olive Oil (one tablespoon per person, sea salt q.b., pepper q.b. and mix everything in a container and let stand. Prepare a soup preferably of fish, vegetables or meat. In a container pour 1 liter of soup and bring to a boil.
Pour the Cous Cous into a ceramic saucepan and season with boiling broth, stirring. Cover with a cotton cloth and let it rehydrate. After 30 minutes check to add more broth. Let stand 1 hour and 30 minutes.
